Artichoke Flatbread
Makes 4 servings

Ingredients
2 (6 oz.) jars marinated artichoke hearts, drained and chopped 1 medium tomato, chopped
4 whole wheat flat breads
6 cups fresh spinach leaves
6 oz. garlic and herb flavored goat cheese, crumbled
½ tsp. salt* ¼ tsp. pepper Pizza seasoning (optional)
1. Chop tomato and drain and chop artichoke hearts. Set aside.
2. Spray both sides of flat breads with pan spray. Top each flat bread with spinach, cheese, artichoke hearts, and tomato.
3. Place on pan under broiler and cook until cheese is bubbling and golden brown and vegetables are heated through
Sprinkle with salt and pepper. Top with pizza seasoning.
Suggested Side Items: fresh fruit, glass of milk
Tips: Try this recipe on the grill! Using a grill can enhance the flavors of this recipe. Place the flat breads directly on rack over medium coals for 2 minutes or until golden (if using a gas grill, place over medium heat) and grill on one side until golden brown. Remove from heat and on the grilled side, place toppings. Return to grill rack and grill about 2 minutes more until bottoms are browned and toppings are heated through.
