Getting started Do right away when you get home: gather ingredients and equipment
small avocado ½ small red onion 1 cup cherry tomatoes
1 garlic clove
2 Tbsp. lime juice
2 Tbsp. olive oil
¼ tsp. chili powder
1/8 tsp. ground cumin
Dash cayenne pepper
1. Peel, pit and slice small avocado. Thinly slice small red onion. Quarter cherry tomatoes.
2. Mince garlic clove and place in bowl. Add remaining ingredients and whisk together for the vinaigrette; set aside. 4 cups romaine lettuce 3. Place lettuce on platter. Fan avocado over lettuce and sprinkle with the tomatoes and onions. Drizzle with the vinaigrette and serve.

Tip: To pick the perfect avocado, avoid those that are extremely soft or very hard. Choose avocados that give slightly to light pressure. If only hard avocados are available, you can ripen them quickly by placing them in a paper bag on the countertop for 1-3 days.
