Black Bean and Corn Salsa
Makes 4 servings
1 red bell pepper
½ red onion
2 Tbsp. fresh cilantro
1 – 14 oz. can of black beans
1 cup frozen corn
1 Tbsp. lime juice
2 Tbsp. red wine vinegar
1 tsp. cumin powder
1. Thaw corn in bowl of room temperature water. Chop pepper and onion into ½ inch pieces; place in separate bowl. Finely dice cilantro and add to bowl.
2. After thawing corn for 5 minutes in water, add corn to bowl. Open and rinse beans. Add to bowl. Add remaining ingredients and mix.
3. Let salsa chill in fridge for 15 minutes before serving.
