Chilled Watermelon-Tomato Soup
Serve 4 (about 1 cup each)
3 cups fresh diced watermelon, seeds removed
1½ cups chopped fresh tomatoes
3 Tbsp. chopped shallots
1 Tbsp. olive oil
1 Tbsp. rice vinegar
2 Tbsp chopped fresh cilantro
½ tsp. salt
1/8 tsp. ground pepper
In a blender container, combine all ingredients; pulsate until desired consistency. Serve chilled.
