LA CROSSE, Wis. (WKBT) — Freekeh Tabbouleh
Freekeh (Uncooked)
Water
Salt
Lemon Juice
Garlic Clove
English Cucumber
Mint Leaves (minced)
Feta Cheese (Crumbled
Olive Oil
lemon zest
grape tomatoes
Red Onion (minced)
Fresh parsley
Bring freekeh, water, and salt to a boil.
Cover and reduce to a simmer. Continue cooking for 25 minutes until water is absorbed and freekeh is tender. (Freekeh will have a bit more chew to it when it’s done then some other grains)
Allow freekeh to cool overnight in a refrigerator.
Add all other ingredients and gently toss.
