Greek Turkey Pita Pockets
Makes 4 pitas
Getting started Equipment you will need: medium frying pan, spatula, chef knife, cutting board, mixing bowl Do right away when you get home: thaw ground turkey if frozen (overnight)
Ingredients
1 lb. ground turkey

2 tsp. olive oil

1 tsp. dried dill

½ tsp. black pepper

¼ cup feta crumbled feta cheese
2 cups spinach
½ medium onion

½ cup plain 0% Greek yogurt

2 tsp. lemon juice

1 garlic clove

1 tsp. dried dill

¼ large cucumber
4 large whole wheat pita pockets
(approx. 6 in.)

Action:

1. Heat olive oil in medium frying pan. Add ground turkey, dill and black pepper to pan. Cook until done. Remove turkey meat from pan and add to bowl.
2. Chop spinach and onion, mix with feta cheese. Add to ground turkey, set aside.

3. Mince garlic clove, mix in small dish with Greek yogurt, lemon juice, and dried dill.
4. Thinly slice cucumber. Distribute turkey mixture into pita pockets. Top each with Greek yogurt sauce and cucumber.

Suggested Side Items: steamed sliced zucchini (sprinkled with garlic powder), rice pilaf
