Pita crisps

These are a quick-to-prepare alternative to ordinary packaged crackers. The recipe multiplies easily, so you can have baskets brimming with the tasty triangles to accompany your appetizers. For variety, you can substitute other dried herbs, such as basil or dill, for the oregano.

Ingredients

One 6-inch plain pita bread round, split horizontally

Olive oil for brushing

1 tsp. dried oregano

2 tbsp. freshly grated Parmesan cheese

Preparation

Preheat the broiler. Arrange the pita bread halves on a baking sheet, rough-side up, on a baking sheet. Lightly brush with oil. Sprinkle with the oregano and Parmesan. Using kitchen shears, cut each pita half into 8 triangles.

Broil for about 2 minutes, or until the triangles are lightly browned and the cheese is melted. Watch closely.

Serve warm or at room temperature.

Advance Preparation

These crisps can be assembled up to 2 hours in advance. They are best when broiled just before serving.

They will keep for up to 2 days in a covered container in the refrigerator. If necessary, recrisp by heating them in a preheated 350° F oven for about 5 minutes.
