Fresh Pumpkin Apple Soup
Makes about 10 cups
8 cups fresh pumpkin, peeled and chopped
4 cups low-sodium chicken broth
3 fresh apples, chopped
1 onion, chopped
3 tsp. minced garlic
2 Tbsp. lemon juice
1 tsp. salt
In a 5-quart slow cooker, combine all ingredients and cook for 8 hours.
