Red Beans and Rice with Turkey

Makes about 10 cups

Getting started

Equipment you will need: large skillet or pot with lid; mixing spoon/spatula; cutting board and knife



1 red onion

1 green bell pepper

1 red bell pepper

1 clove garlic

2 Tbsp. oil


1. Prepare and dice onion and bell peppers. Mince garlic. Add oil to pot or large skillet and sauté vegetables for 5-8 minutes, or until desired tenderness.


1 pound ground turkey breast


2. Add to vegetable mixture and cook until no longer pink.


2 cups long-grain rice, uncooked


3. Add rice to mixture and stir until well coated.


3 Roma tomatoes

2 cups vegetable broth

1 can red beans, rinsed and drained

1 Tbsp. chili powder

1 ½ Tbsp. paprika


4. Chop tomatoes and fold into mixture. Add remaining ingredients and stir. Cover and let simmer for about 30 minutes or until all of the cooking liquid is absorbed by the rice.
