Spiced Nuts and Seeds

Makes 16 servings

3 cups raw nuts (such as almonds and walnuts)
¼ cup flaxseed
¼ cup raw, hulled sunflower seeds
¼ cup uncooked quinoa
2 large egg whites
1 tsp. salt
½ tsp. cayenne pepper
½ tsp. ground cumin
½ tsp. ground cinnamon
2 Tbsp. honey

Preheat oven to 325 degrees F.

In a large mixing bowl, combine nuts, flaxseed, sunflower seeds, and quinoa.

In a small mixing bowl, whisk together egg whites, salt, cayenne pepper, cumin, cinnamon, and honey. Pour over nut mixture and toss to combine.

Spread mixture evenly over baking sheet. Bake until dry and darkened, about 30 minutes. Stir occasionally.
