Vanilla Berry Crepes-Gundersen Health System
Vanilla Berry Crepes
Makes 12 crepes
1 1/2 cups 2% milk
3 Egg yolks
2 Tbsp. vanilla extract
5 Tbsp. butter
1 1/2 cups all-purpose flour
2 Tbsp. sugar
1/2 tsp. salt
1 cup low-fat vanilla yogurt
1 cup raspberries
1 cup blueberries
1. Mix milk, egg yolks, and vanilla in a large bowl.
2. Melt butter. Add ingredients down to salt to bowl. Mix until well blended.
3. Heat griddle or frying pan over medium heat until hot. Coat with spray. Pour ¼ cup of the batter into the pan; tip pan to spread batter to the edges. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden. Repeat with remaining batter.
4. Place ingredients on one side of each crepe; fold over.
